Kelsey Cheslock is the marketing director at Sparkling Pointe. She was fantastic both on and off camera as a huge help for this segment of the show. She’s also an actress and she was running up against time during our segment recording, as she had a rehearsal to get to. We are most appreciative for her time and her knowledge of sparkling wine and all of the wonderful local products we paired with it.
You’ll notice Kelsey mentions méthode champenoise and you might wonder what that is. Well, wonder no more; we actually showed that to you in this episode. The wine undergoes a secondary fermentation inside the bottle, which makes the bubbles we all enjoy, as Gilles notes. All Champagne and most higher end sparkling wine is made using this process. And by the way, Champagne can only be correctly labeled as such if it comes from the Champagne region of France. In other words, all Champagne is sparkling wine but most sparkling wine is not Champagne.
