If you saw Gilles “open” that sparkling rosé with his saber (which was beautiful, by the way), that comes from the time of Napoleon. It is called sabrage or sabering. He told me the story of Napoleon’s men riding through villages and grabbing up what they could to drink. Taking saber to the tops of the bottles was the fastest way to open them and move on.
